Hello and welcome to my blog “Victorem Viventem” and today’s installment of “Your Gonna Need a Gym Membership Tuesday” where I will share with you dear reader one of my family’s favorite dishes. I have noticed lately that some friend on Facebook have been sharing Vegan recipes so I thought that I would follow suit for those said friends, so today is not so much of a “moment on the lips” kinda recipe but a HEALTHY VEGAN (or not) recipe, that depends on YOU! This doesn’t happen often but I understand that there are many dietary restrictions and allergies out there and want you to know that healthy is always the first option when I am nourishing my family and friends. I honestly can’t remember how I came across this recipe but I saw it once and immediately knew that I had to create my own version of “Not So Fried Rice.” I have served this several ways, with meat and without and it’s “Forks in, Plates empty” kinda good each and every time.
The trick is in the ingenious preparation of the main ingredient and star of this dish, which is Cauliflower but no one would ever know it at first glance or taste because of its consistency. I love this delicious vegetable any which way; drizzled with olive oil/salt and pepper and slow roasted until golden brown? Yes please. Steamed to a perfect nutty crispness…Oh yea baby…especially smothered in aged cheddar sauce. DAMN! I mean DRIZZLED in aged cheddar sauce! I got myself started and I’m trying to keep this healthy…er so I shall back up and stick with the program. In this recipe you are either going to need some master chopping skills or a hand chopper (I always want to say HI YA! After saying that word), I use a hand chopper (HI YA!) now thanks to Marg and Don who frequently benefit from its uses but prior to that I just chopped it up manually really reaaaaaaaallly small so that it looks almost like a couscous.
PLEASE NOTE that I use a whole head of cauliflower for this recipe and a extra large skillet and it makes enough to feed myself and 2 hungry men as a dinner entrée as well as I am able to put a meal away in the freezer for my husband to enjoy at work during the upcoming week. Not So Fried Rice:
You will need but are not limited to:
2 tbsp coconut oil
1 onion diced small
Generous pinch salt/pepper
In a large skillet over medium-high heat, melt the coconut oil and add the diced onion and salt and pepper, stirring frequently and cooking until just translucent in color. (I have also added diced fresh jalapeno or red chili flakes at this stage for a spicier version, omit pepper recommended below if doing this).
1 head of cauliflower (chopped into lil bits)
1 carrot thinly sliced (I use a mandolin slicer for even slicing)
1 stalk of celery thinly sliced (also mandolined)
2 tbsp water (or chicken/beef stock depending on you)
1 tsp ground pepper (I love the combination of pepper with the peppery/nutty flavor of cauliflower)
Salt to taste
After this it is up to you, either leave it as is which is pretty darn tasty or let your creative brain and hungry tummy run wild with the possibilities. To the onions in the skillet, add the cauliflower and other vegetables as well as the water or stock (or leftover cooked and chopped protein) and pepper to the skillet and cover with a tight fitting lid. Keep covered and allow your vegetables to steam for 1 minute removing the lid and giving it a quick stir. Leaving the lid off, allow your vegetables to cook for another 2-4 minutes stirring them occasionally, and Guess what? Your done! Can you believe that? Easy right? Serve this piping hot, seasoning it with salt to taste either as a side dish at a larger gathering or as your main entrée to feast upon.
Last night’s feast included fresh asperagus spears chopped up into small bits for even cooking and some chopped up left over chicken (because my husband LOVES meat)from the night before and it was delicious.
