1 cup brown sugar
¾ cup white sugar
½ cup flour
1 ¼ cup cocoa
1 cup chocolate chips
½ tsp salt
1 cup melted butter (I have also used coconut oil to make these and it’s so yummy)
2 tsp vanilla
PEANUT BUTTER SWIRL:
¾ cup peanut butter (or substitute)
½ cup icing sugar
4 tbsp melted butter (or coconut oil)
½ tsp vanilla
Preheat the oven to 375o. Prepare an 8"x11”rectangular cake pan either by greasing and flouring or using parchment paper (which I prefer, less mess to clean up). In a large bowl add the eggs and sugars and mix them together. In a small bowl sift the flour, cocoa and salt together and then add the chocolate chips. Melt the butter, add the vanilla and mix this into your egg and sugars. Add in your dry ingredients and beat until well mixed then pour this into your prepared pan. In a small bowl combine your swirl ingredients and dollop that on top of the brownie batter at various places. Take a knife and push it in and swirl it around whichever way you want to make it pretty. When you have created your peanut butter swirl work of art, pop that bad boy into the preheated oven for 45-50 minutes. When you insert a toothpick it should come out a little moist and it can be set aside on a rack to cool. Once cool…Your gonna need a gym membership…Enjoy!
Wonder what next week has in store? Guess you will have to check back to find out! Until then remember that “Victorem Viventem” means “Victorious Living” and it is what YOU make of it, not how others try to define it for you. Have a blessed day.
