Since having photos of my pies posted on Facebook, I’ve been asked by several people to share the recipe I used for the decadent chocolate cherry pie that I made alongside a picture perfect apple pie to celebrate and I am happy to meet that request!
It was honestly the easiest pie I’ve ever made that it didn’t even feel like baking to me and I love to bake! Four ingredients and you have droolicious pie? Okay I can do that!
Unfortunately in Edmonton, Alberta we are still in the winter phase of our seasons and purchasing fresh cherries isn’t an option so we are going to “cheat” a bit. It’s OKAY to cheat and make things easier... we lead BUSY lives!
If it were summer I would’ve used fresh cherries and made my own glaze, but will have to share that recipe with you in a couple more months when cherries are plump and bursting with delicious red juices. My mouth just watered...Come on summer!
For now let’s make this easy peasy chocolate cherry pie so that you’re able to dig in and celebrate PI day a couple of days late...better late than never. I mean, its PIE! ANY day is PIE DAY! So Celebrate and Enjoy!
2 cups Christie Oreo baking crumbs
6 tbsp butter or coconut oil
1 can (540 ML) cherry pie filling
Kraft Baker’s semi- sweet chocolate for garnish (shaved) Bitter sweet would be lovely too!
Preheat oven to 350 degrees
Place the Christie Oreo baking crumbs into a shallow pie plate and add in the melted butter and incorporated them together with a spatula. I personally use my CLEAN fingers for this next step because I like to add a loving touch to my baking so when it’s combined I press the crust into the pie plate evenly over the bottom and sides.
Pop this into your heated oven for 10-12 minutes. My nose can always tell when it’s ready by the smell of warm chocolate wafting through my kitchen. Don’t get me started on my love affair with chocolate. I Love pie, but I LOVE chocolate with bells, whistles and cayenne pepper and salt!
Here comes the hard part. Let the crust cool without eating it with a dollop of ice cream
Once cooled open the can of cherry pie filling and pour that lovely velvety cherry goodness into your crust and shave on some bakers chocolate for that extra kick of decadence. Voila! Chocolate, cherry pie!
Okay, I lied NOW comes the hard part.
Refrigerate for up to ONE HOUR! Let it set! I KNOW it’s not going to be easy but trust me; the wait makes it all that more divine.
Now if you will excuse me, I have some pie to dish up for lunch. Chocolate = vegetables and cherries = fruit, it’s healthy, right?
